Celeriac

VEGETABLE

Celeriac is the off-shaped, knobbly root of what we know as celery. It is used like many root vegetable, in soups, roasted, or to bulk out dishes.

It has a great profile of both vitamins and antioxidants, especially vitamin K. This vitamin in particular has associations with cancer cell supression as well as improving calcium absorption for healthy bones.
