Zucchini

Also know as courgette, zucchini is a type of squash with a soft, water-dense flesh. They can be utilised in various ways, including being part of roasted dishes or even being turned into noodles.

Zucchini have a few vitamins such as C and B6, but are mostly water. But, zucchini does have a good selection of phytonutrients with antioxidant and anti-inflamatory effects. These include various carotenoids like lutein and zeaxanthin, both being benefical to eye health.
